The Wait Is Over: Official Certificates Have Arrived

gpn-en

The official Guinness World RecordsÂŽ certificates have finally arrived. We are proud to announce that we have received the official certificates bearing the logo of our association, GPN – Associazione Gruppo La Piccola Napoli. With these achievements, Guinness World RecordsÂŽ has recognized and rewarded our commitment, the result of a journey built over time and focused on the future, culminating in the presence of the GPN logo on the official certificates. Why? The answer is simple. 10,800 pizzas distributed free of charge for charitable purposes in Torre Annunziata GPN – October 2019 12,000 pizzas distributed free of charge for charitable purposes in Sant’Antonio Abate GPN – June 2026 10,000 pizzas distributed free of charge in Switzerland, as organizers and sponsors June 2018 More than 32,000 pizzas donated More than 32,000 pizzas have been donated to thousands of people thanks to the dedication of volunteers, pizza makers, supporters, and sponsors. This number may not seem extraordinary to everyone, but for us it represents a remarkable achievement. The value of an association is not measured by words, but by what it leaves behind for its community. These figures tell a story of commitment, solidarity, professionalism, and credibility. They reflect the work of people who choose every day to contribute and make a difference. Being among the first to see the logo of GPN – Associazione Gruppo La Piccola Napoli displayed on official Guinness World RecordsÂŽ certificates is a source of great pride for us. However, what truly defines us is not only this important recognition. It is what we have done and continue to do for our local communities and for the people we serve. We will continue our work with the same passion, dedication, and sense of responsibility. Because, for us, the value of an association is not measured by the size of its headquarters, but by what it accomplishes every day for its members and the wider community. Our heartfelt thanks go to all of you for your trust, support, and encouragement. GPN – Neapolitan Association “We Are Naples”

gpn-en

We, the Neapolitan Associations, are the ones who must protect and preserve the art of pizza, handed down from the ancient pizzerias of Naples. A heritage made of gestures, traditions, masters, and knowledge that must never be lost. As our President Pasquale reminds us — having had the honor of working in three historic Neapolitan pizzerias — tradition is not just told: it is lived, learned, and passed on. That’s what makes his journey unique: today he is the only president of a Neapolitan pizza-makers’ association who is himself a pizzaiolo. His professional story began very early: at just 14 years old, he joined the Pizzeria Capasso in Porta San Gennaro, a historic establishment founded in 1847. In a video, we see him beside the oven with the great master Don Vincenzo Capasso — a brief image that captures an important piece of his life and of Neapolitan pizza history.Later, his path led him to Antica Pizzeria Lombardi 1892, another guardian of tradition across generations, and finally to Antica Pizzeria Port’Alba, considered one of the oldest and most symbolic in the city. Three places. Three schools. Three pieces of Neapolitan history. And one great mission: to defend, respect, and pass on the authentic art of the Neapolitan pizzaiolo. Because Neapolitan pizza is not just a product — It’s culture. It’s memory. It’s identity. It’s Naples. GPN – The Little Naples Group We preserve tradition. We defend our art. We pass on the future. 4 tons of pizza in 12 hours: a new Guinness World Record and a powerful lesson in solidarity

gpn-en

Sant’Antonio Abate (NA) – A new Guinness World Record that goes far beyond numbers, becoming a powerful message of sharing, inclusion, and support for the community. With 4,345.58 kilograms of pizza produced in just 12 hours, the target of 4,000 kg set by the GPN – Associazione Napoletana Pizza & Food O.D.V was officially surpassed and certified by Guinness World Records judge Lorenzo Veltri. Over 12,000 pizzas were prepared thanks to the tireless work of dozens of pizza makers from all regions and 26 countries (Mexico, Germany, France, Hungary, the Caribbean, Serbia, Morocco, Tunisia, Croatia, etc.), who worked side by side with passion, professionalism, and a genuine team spirit, creating an extraordinary demonstration of international cooperation. But the real record is one of solidarity. Almost all the pizzas produced were donated to volunteer associations and Third Sector organizations, which distributed them to hospitals, shelters, and directly to the most vulnerable individuals: homeless people, persons with disabilities, and families facing socio‑economic hardship. An initiative that transformed a major gastronomic achievement into concrete help, capable of generating an immediate impact on the community. Part of the production was also offered to local residents and the many visitors attending the event, welcomed in the dedicated food area, helping turn the occasion into a true celebration open to everyone. Pizza and solidarity: a combination that tells the story of Campania Alongside the record‑breaking challenge, the event hosted a moment of discussion dedicated to the deep connection between pizza and solidarity, two core values of Campania’s cultural identity. Speakers: ● Pasquale Telese, President of GPN Association; ● Francesco Conato, Vice President of GPN Association; ● Ilaria Abagnale, Mayor of Sant’Antonio Abate; ● Flavia Matrisciano, General Director of the Santobono Pausilipon Foundation; ● Alfonso Pecoraro Scanio, former Minister of Agriculture and the Environment and President of the Univerde Foundation; ● Luciano Pignataro, journalist and writer; ● Vincenzo Pagano, founder of Scatti di Gusto. The speakers highlighted how pizza represents not only one of the most renowned Italian excellences worldwide, but also an extraordinary tool for community building, inclusion, and social solidarity. A feat made possible by the work of a great team The GPN Association wishes to extend its heartfelt thanks to all the pizza makers who contributed to this achievement. Amid effort, enthusiasm, and thousands of pizzas baked without pause, they demonstrated that teamwork can turn a world record into a concrete example of altruism. A special thank‑you also goes to the sponsors and partners who believed in the project, supporting it with professionalism and generosity. Their contribution was essential to the success of the initiative. Solidarity Worthy of a Guinness Record

gpn-en

Official Attempt for the Guinness World Records – OFFICIAL PRESS CONFERENCE The GPN Association is pleased to announce the official press conference for the presentation of the event dedicated to the Guinness World Records. The press conference will be held at the café “Via Roma Lounge Coffee”, located on Via Roma, opposite the Town Hall of Sant’Antonio Abate, on June 15 at 11:00 a.m.. The meeting will be an important opportunity to illustrate the details of the initiative, its objectives, and the participation procedures for what is expected to be a major event for the entire community. More than fifty associations involved and over one hundred pizza makers from all over the world. These are the numbers behind the event “The Guinness Record of Solidarity”, organized by GPN – Neapolitan Pizza & Food Association. A race against time on one side and a mission of solidarity on the other: part of the pizzas will be donated to volunteer organizations and third‑sector entities, which will deliver them to hospitals, shelters, and directly to people facing difficult situations. The others will be available to citizens and visitors, who will have the opportunity to follow the challenge step by step. The pizza makers will take turns in a true “pizza relay,” where technique, speed, and coordination will be essential to achieve the Guinness World Records title. The initiative supports the Fondazione Santobono Pausilipon. In addition to the support of the Mayor of Sant’Antonio Abate, Ilaria Abagnale, Vincenzo Pagano of Scatti di Gusto, Alessandro Condurro of L’Antica Pizzeria Da Michele, and Antonio Starita of Pizzeria Starita, the event will also be attended by the General Director of the Fondazione Santobono Pausilipon, Flavia Matrisciano, along with many sponsors. SPEAKERS EVENT SPONSORS MEDIA Rai, Mediaset, and major national networks. FREE ENTRY The press conference will be open to the public, giving citizens, enthusiasts, and visitors the chance to attend and learn all the details of the initiative up close. For further information: Associazione GPN associazionegpn@gmail.com www.gpnassociazionenapoletanafood.it WhatsApp GPN: 351 256 2438 The GPN – Associazione Napoletana Pizza & Food O.D.V. has been active since its foundation in promoting and enhancing the pizza sector worldwide. Over the years, it has gathered support from European and non‑European pizza makers, all driven by the goal of protecting pizza as a culinary heritage that, from its birthplace, has been exported across the globe, becoming a universally loved product. Location and date Sant’Antonio Abate – Piazza della Libertà 30 June 2026 The Project The event “Il Guinness della solidarietà” was created with an objective that is both ambitious and deeply symbolic: to set a new world record by preparing 12,000 pizzas in a single work session, transforming a daily and culturally iconic Italian gesture into a powerful tool of sharing and concrete support. This is not merely a numerical challenge, but an initiative that brings together tradition, professionalism, and a spirit of solidarity, involving pizza makers from all over the world, united by their membership in the promoting association and by their desire to contribute to a social cause of great value. The beating heart of the event will be Piazza della Libertà, which will be transformed into a large open‑air workshop for the occasion. Numerous stands equipped with professional ovens, workstations, and ingredient‑preparation areas will be set up. The pizza makers will take turns in an organized and continuous rhythm, creating a true “pizza relay”, where technique, speed, and coordination will be essential to achieving the record. The public will be able to watch every stage of the process up close, experiencing an immersive celebration of the art of pizza in all its forms. One of the most meaningful aspects of the event concerns the destination of the pizzas produced. The vast majority will be donated to volunteer associations and third‑sector organizations, which will handle distribution to the most vulnerable individuals. The pizzas will be delivered to hospitals, shelters, and directly to people facing hardship, such as the homeless, individuals with disabilities, or families in socio‑economic difficulty. In this way, the record becomes a tangible act of solidarity, capable of generating an immediate impact on the community. At the same time, a portion of the pizzas will be offered to citizens and visitors, who will have access to a dedicated food area set up for the event. This space will not only serve as a refreshment point but also as a place of gathering and sharing, where the public can feel like an integral part of the initiative, helping to create an atmosphere of celebration and collective participation. The event will be enriched by the presence of personalities from the entertainment world, well‑known figures, and institutional representatives, whose participation will help give visibility and prestige to the initiative. Their presence will serve as an important vehicle for raising awareness, amplifying the message of solidarity and attracting media attention at both national and international levels. Equally essential is the official recognition of the record attempt, ensured by its registration with Guinness World Records. Official judges from the London headquarters will supervise the entire operation, verifying compliance with all criteria required for the certification of the record. Their presence will lend rigor and credibility to the undertaking, elevating the event to one of global significance. In summary, “Il Guinness della solidarietà” is an initiative that goes far beyond a simple culinary challenge: it is a project that places people at the center, highlights professional excellence, and demonstrates how even a simple gesture—when shared on a large scale—can become a powerful engine of solidarity and inclusion.

The Great Evolution of Pizza: When Pizza Makers Conquer Fine Dining – Part 1

gpn-en

Hydrations at 90%, innovative leavening methods, creative fusion: Italy’s 2025 pizza makers are challenging Michelin‑starred chefs. A culinary art rising higher than ever—without losing its roots. Once upon a time, there was the Margherita pizza. Tomato, mozzarella, basil, oil. Four ingredients on a disk of leavened dough, the symbol of an Italy that excelled through simplicity. Today, that same pizza has become the starting point of a culinary revolution that has transformed pizza makers into true chefs—protagonists of a gastronomic battle that finally places them on equal footing with the masters of fine dining. Stepping into contemporary pizzerias in 2025 means entering a universe in constant evolution: doughs hydrated at 90% that demand absolute mastery, innovative leavening with controlled fermentations, toppings ranging from champagne pearls to aromatic powders. This is not a drift. It is a conquest. It proves that the art of pizza can compete with any other culinary discipline. Where has simplicity gone? It hasn’t disappeared—it has evolved. Today’s simplicity requires more skill, more study, more awareness than ever before. A perfect Margherita in 2025 is born from technical knowledge infinitely greater than that of twenty years ago. It is simplicity refined, not lost. The Mastery of Extreme Hydration The first sign of this professional evolution can be found in the technical command of hydration levels. If traditional Neapolitan pizza typically ranged between 55% and 65% water relative to flour, today pizza makers have conquered unexplored territory: 70%, 80%, even reaching 90% and beyond. “The more water you add, the greater the yield and the lighter the resulting dough,” but achieving this requires technical expertise that only true professionals possess. Extreme hydration has become the ultimate test of a pizza maker’s mastery: handling doughs that “if poorly worked can turn into sticky masses” means reaching a level of competence that rivals the most refined pastry chefs. Hydration at 90%—the level that goes beyond every convention—is the frontier today’s pizza makers have conquered through years of study and experimentation. It is not ostentation; it is professional evolution. It proves that behind every perfectly airy cornicione lies the same scientific precision found in the most sophisticated French patisserie. Innovation in Leavening: Advanced Research But the true revolution lies in the experimental approach to leavening. Contemporary pizza makers no longer rely solely on brewer’s yeast: they explore alternative fermentations, study “fermented waters” made with selected fruits such as mela annurca, and experiment with pre‑ferments that require days of preparation. Of course, these techniques demand extensive training and rigorous controls. But that is precisely the point: today’s pizza makers are educating themselves, studying microbiology, and collaborating with research institutes. They don’t improvise — they innovate through scientific method. So much so that the training sector is finally recognizing this evolution. The Creativity of Fusion: A Cultural Opening Parallel to the technical evolution, we are witnessing an extraordinary cultural expansion. The pizza makers of 2025 create “hybrid pizzas” that combine ingredients from different culinary traditions — interpretations ranging from Asia to South America — demonstrating a versatility that rivals that of top international chefs. Naturally, not every palate is ready for such bold combinations. Traditional customers, loyal to Margherita and Marinara, may initially frown at a pizza topped with tandoori chicken or Japanese‑inspired elements. And that’s understandable: this is a gustatory revolution that challenges habits shaped over generations. But this is precisely where the creative courage of the new pizza makers emerges: they don’t simply replicate established formulas — they dare to explore uncharted territory, confident that responsible innovation can open new frontiers of flavor without betraying the essence of Italian pizza. On the Italian front, creativity knows no limits. “Showy alveolation is no longer the trend”: the focus now shifts to “elaborate and creative toppings” that require cross‑disciplinary skills. Creams and mousses prepared with fine‑dining techniques, spherifications introducing elements of molecular gastronomy, and the skillful use of crunchy components such as crumbled tarallo or innovative wafers. Pizza thus becomes the perfect stage to showcase skills that span from traditional cooking to gastronomic avant‑garde. “Crunchiness and savoriness” are not accidental: they are the result of in‑depth studies on textures and sensory contrasts. The Rise of Gourmet Pizza: Professional Recognition This evolution hides behind the label “gourmet,” but it is far from a commercial whim. It represents the legitimization of a profession that has earned the same respect traditionally reserved for Michelin‑starred chefs. When a pizza maker uses premium ingredients and sophisticated techniques, they are proving that pizza can be the perfect vehicle for haute cuisine. The GPN Association actively supports this renewal, recognizing that evolution does not mean betraying tradition, but elevating it. Gourmet pizza is not the negation of the Margherita — it is the demonstration that from strong roots, majestic trees can grow. The Challenge to Chefs: A Hard‑Won Equality Data from the 2025 Pizza Observatory tells a fascinating story: Neapolitan pizza still holds 52% of consumer preference, yet alongside it flourish new interpretations that reveal the maturity of the sector. Consumers still look for “pizza quality (80%),” but now they also recognize and appreciate technical and creative innovation. It is significant to note how “a new generation of pizza makers is rediscovering the Ruota di Carro,” not out of nostalgia, but as a technical foundation from which to launch new explorations. It is “a future that honors the past” in order to build something even greater. And you? What do you think? Now it’s time to hear your voice. Does this evolution of pizza excite you or leave you uncertain? When you walk into a pizzeria, do you look for technical innovation or do you seek comfort in tradition? Have you ever tasted an extreme‑hydration pizza that won you over? Or do you still prefer the classic Margherita “like it used to be”? Do you think pizza makers are right to compete with Michelin‑starred chefs, or should they remain faithful to the simplicity of their origins? A Pizza for Gaza

gpn-en

Solidarity travels from the oven to the table An idea by Luciano Sorbillo Tre, master pizzaiolo and ambassador of Neapolitan pizza around the world, who — together with GPN – Neapolitan Pizza & Food Association by Paco Linus and Sar Imballaggi, and with the support of Emergency — launches the initiative “A Pizza for Gaza.” The goal is to involve as many pizzerias as possible across Italy, donating 1 euro for every pizza sold to support Emergency, which operates in Palestine with medical and hospital projects dedicated to caring for people affected by the war, especially children. THE PROJECT Each participating pizzeria will receive dedicated communication materials (posters and customized pizza boxes) to make the initiative visible inside their venue. Customers, simply by ordering a pizza, will know they are contributing with a small but concrete gesture to the fundraising effort. The words of the promoter “Pizza means sharing, inclusion, and solidarity. With ‘A Pizza for Gaza’ — says Luciano Sorbillo — we want to transform a symbol of Italy around the world into a tool of real and immediate help. I invite all fellow pizzaioli, from North to South, to join us and work together for a cause that concerns us as human beings even before it does as professionals.” Partners of the initiative HOW TO JOIN Pizzerias interested in participating can join by contacting the number provided. Every contribution, even the smallest, can make a difference. For press information and participation: • 339 27 09 004 “With this project, we want to transform a symbol of Italy around the world into concrete help for those who are suffering.”

The Great Evolution of Pizza: When Pizzaioli Conquer Fine Dining – Part 2

gpn-en

The Training Revolution: From Classrooms to Excellence In the first part, we explored how pizzaioli in recent years have achieved technical parity with Michelin‑starred chefs. But how does one learn to manage 90% hydration dough or develop innovative fermentation techniques? The answer lies in a true educational revolution that is reshaping the Italian training landscape. In 2025, a historic memorandum of understanding was signed between the Ministry of Education and the leading academies in the field, introducing specialized pizzaiolo training programs within hospitality institutes. This educational revolution already has solid foundations. The GPN Association, a pioneer in this area, has been collaborating for years with state hospitality schools through projects such as “Scuola Viva,” approved by the Campania Region. The program “Knead, Create, Taste” includes eight theoretical‑practical lessons and three educational visits to partner companies in the sector, directly involving students in school laboratories with qualified master pizzaioli serving as instructors. The approach is one of integrated training: from the theory of technical standards to hands‑on practice in the school’s ovens, all the way to visits to producers of raw materials. A model that is setting a benchmark and demonstrating how professional associations are actively shaping the future of training in the sector. At the same time, prestigious culinary institutions have launched specialized courses in “Gastronomic Pizza,” designed to “combine technique and gastronomic culture to develop up‑to‑date skills.” These programs go far beyond practical training: they delve into dough chemistry, fermentation microbiology, and scientific food pairing. The Scientific Method Enters the Pizzeria What we are witnessing is the application of the scientific method to pizza. The new generation of pizzaioli no longer relies on improvisation: they document every step, measure temperatures with laboratory‑level precision, and study dough‑maturation times the way researchers analyze their experiments. The master pizzaioli who dominate industry rankings embody this philosophy perfectly: each of their pizzas is the result of years of controlled experimentation, where every ingredient is tested, every pairing is researched, and every technique is refined through hundreds of trials. This scientific rigor is elevating the international reputation of Italian pizza. It is no longer perceived as “fast food,” but as accessible fine dining. International Recognition This evolution is propelling Italian pizza to the top of global gastronomic rankings. The techniques developed by Italian master pizzaioli are now studied in culinary schools in New York, Tokyo, and London. Historic Neapolitan pizzerias are exporting the tradition of the “Ruota di Carro” around the world, while the masters of contemporary innovation have created the modern gourmet pizza now replicated by international colleagues. UNESCO has recognized the art of the Neapolitan pizzaiolo as Intangible Cultural Heritage of Humanity, and today that recognition extends to all innovative interpretations that remain rooted in Italian tradition. Responsible Innovation: The Secret of Success The success of this evolution lies in responsible innovation. The best contemporary pizzaioli do not betray tradition — they elevate it. When avant‑garde pizzerias experiment with ancient‑grain doughs, they are not rejecting history but rediscovering it. When the finest establishments introduce tasting menus, they are not distorting pizza but demonstrating its extraordinary versatility. Future Perspectives: Where Are We Heading? 2025 has shown us only the beginning. Emerging trends point toward: But above all, a “return to origins” is emerging as a defining trend: a new generation of pizzaioli is rediscovering the traditional Ruota di Carro — not out of nostalgia, but as the perfect technical foundation for new explorations. The Pride of a Nation This evolution of pizza represents something greater: it demonstrates that Italy knows how to reinvent itself without losing its identity. In recent years, pizzaioli have done what our country does best — they have taken a perfect tradition and made it even greater. We are not witnessing the death of traditional pizza, but its multiplication into infinite possibilities. The perfect Margherita coexists with creations that require years of study. The traditional Neapolitan 60% hydration lives alongside the 90% hydration of contemporary experimentation. The Pizza of the Future Is Already Here Does “normal pizza” still exist? That was the starting question. The answer is: it exists, and it is more “normal” than ever — because today, “normal” means excellence as the standard. A Margherita in 2025 is born from technical knowledge, attention to raw materials, and respect for maturation times that, twenty years ago, belonged only to the great masters. It is conscious simplicity, not accidental simplicity. The pizza of the future is not the one with fifteen exotic ingredients, but the one in which every single element — from the flour to the olive oil — is chosen with intention, crafted with impeccable technique, and served with the passion of those who know they are guardians of a universal heritage. Italian pizzaioli have won their battle: not only have they reached the level of Michelin‑starred chefs, they are inspiring them. And the best part is that this is only the beginning. The pizza of 2025 exists, and it is magnificent. It is Italian, it is innovative, it is perfect. And now the whole world envies it even more.ù Only what you dedicate time and energy to will define your true existence… #COLLABORATEWITHTHEFUTURE PRESENT WORLDWIDE with more than 500 members.
